I ordered tiger nuts a few months ago since I am always on the lookout for a travel friendly snack that won’t destroy my blood sugar. I was super excited to them, but when I firs tried them I have to admit that I wasn’t into it. I tried them a few times, but just wasn’t a huge fan of the taste and texture as a snack. Since they were a little on the pricey side, I didn’t want to throw them out but wasn’t sure what to use them for. Then, a few weeks ago I was at Natural Products Expo West and saw Gemini Organic with their horchata drinks. I thought to myself “THAT’S what I can do with those damn nut tuber things!” So, I whipped up this really easy horchata recipe for you all to enjoy in rum cocktails, poolside or as a sweet something the kids will love that’s dairy free. Enjoy!

2 cups shelled tiger nuts
8 pitted dates
4 cups water, plus extra for soaking
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon sea salt
Nut bag or cheesecloth for straining

Cover the dates and tiger nuts in a bowl with water and soak overnight
Drain, and add them to your blender
Add 4 cups water and blend on high until a liquidy paste forms
Using a nut bag or cheesecloth, strain the paste letting the liquid pour into a bowl
Once all of the moisture is gone, return the liquid to your blender and add the cinnamon, sea salt and nutmeg
Blend on high until well combined, chill and enjoy over ice
Once refrigerated for a while, the water will separate, just shake it up before drinking!
