Recipe: Paleo Mocha Chia Pudding
Pudding for breakfast? Yes please. What about a mocha pudding packed full of superfoods to amp you up for your day? Now we’re talking. This recipe for Paleo Mocha Chia Pudding is like strapping on a jet pack first thing in the morning because it uses cold brew coffee, plenty of healthy coconut milk fat and black chia seeds for long lasting energy. I don’t know about you, but anytime I hear the word “mocha” my mouth starts to water. This chocolatey coffee goodness is super creamy and slightly reminescent of tapioca pudding, but without all the sugar and dairy milk. How can something so delicious be such a nutritional powerhouse? Leave it to the chia seed.
Chia seeds are packed full of Omega -3 fatty acids, fiber, and protein. When added to a liquid, chia seeds absorb about 3x their volume in liquid which creates a gel rich in nutrients and ideal for thickening puddings. For the caffeine buzz, I use Chameleon Mocha Cold-Brew. It is a smooth, low-acid coffee concentrate with a nice caffeine kick. If you want to make your own, cold strong-brewed coffee mixed with raw cacao may be substituted.
This pudding is a super creamy and delicious start to your day. Why stop there? It is also great as a snack and makes a perfect dessert. Let’s dig in!
Paleo Mocha Chia Pudding
- 2 1/2 cups coconut milk
- 1/2 cup Chameleon Mocha Cold Brew Coffee
- 3/4 cup chia seeds, or 1 cup if you prefer it thick
- 1/2 banana
- 1 1/2 tsp. vanilla
- Toppings: Whatever you can dream up! Coconut, berries, stone fruits and nuts are all delicious.
Blend coconut milk, cold brew, banana, and vanilla together. Place in a large Tupperware and add chia seeds. Mix together with a whisk until chia seeds are submerged in the liquid mixture and everything is combined.
Let thicken in the fridge for a few hours. Top with whatever you want, but I especially love almonds, blueberries, strawberries and cacao nibs with a little cinnamon. Get creative!
